Pastaless Lasagna Cups



Pastaless Lasagna Cups


with a wonton wrapper crust

Ingredients:

1/3 lb Ground Chuck-2 layer
     -or 1/2 lb Ground Chuck-1 layer
Salt & Pepper, to taste
1/4 Onion, minced
1 clove Garlic
1 cup Spaghetti Sauce
Oregano
Basil 

1+ 3/4 cup Parmesan Cheese, grated 
     -Note: Reg Size shaker=8 oz=2 cups
1+ 3/4 cup Mozzarella Cheese, shredded 
     -Note: sm 8 oz pkg=2 cups
1 cup Ricotta Cheese
     -Note: sm 15 oz tub=2 cups

24 wonton wrappers - 2 Layer
     -or 12 wonton Wrappers - 1 Layer


Preheat Oven to: 375 degrees

Directions:
Topping:

Set aside 3/4 cup Parmesan cheese and 3/4 cup mozzarella cheese for the top of your cupcakes. 

Meat Sauce: 

Brown beef, onion, garlic and season with salt and pepper. Drain. 

Stir in oregano and basil to the 1 cup of pasta sauce. Add the cooked meat mixture.

Cheese Filling:
Mix together 3/4 c ricotta, 1 cup mozzarella and 1 cup Parmesan. 




Prepare Pans: 
Spray muffin tin with cooking spray. Press a wonton wrapper into the bottom of each muffin tin.

Add The Filling:

For 1 Layer Cups: Fill half with cheese filling / half with meat sauce.

For 2 Layer Cups: cheese filling / meat sauce / wrapper / cheese filling / meat sauce.

Topping:
Top with the reserved Parmesan and mozzarella cheeses.

Bake:
18-20 minutes or until edges are brown. Remove from oven and let cool for 10 minutes. Loosen the edges with a knife and they should pop right out. 


Special Tips or Information: 

Double Recipe:
Making 24 cups will use up most of the full size ingredients, like 1 package of wrappers, 1 lb Hamburger 1 (15 oz)  tub of Ricotta and 1 (16 oz) jar of Pasta Sauce. Freeze the leftovers cups or individually (cheese filling & meat sauce & wrappers). 

Additional Comments:
Leftover Wrappers:
If you are making this recipe to use up leftover wonton wrappers, like from Crab Rangoon, and don't have 24 wrappers left...use the 1 Layer.  

And Visa Versa, make Crab Rangoon's with leftover wrappers from this lasagna recipe.

To Freeze Lasagna Cups: 
Wrap them in plastic wrap, place in an airtight container and freeze them for the next time you want homemade lasagna in minutes without having to cook.

Quantity: 
One recipe makes 12 cups. 
Double recipe makes 24 cups:
