Mexican Macaroni Salad

Ingredients:
1 lb Elbow Macaroni, drained & rinsed
2 ears Fresh Corn
     -or 1 small bag Frozen Corn
1 can Black Beans, drained & rinsed
     -or Red Kidney Beans
1/2 cup Black Olives, chopped
6 Roma Tomatoes, chopped
     -or 2 Large Tomatoes
3 Whole Green Onions, chopped
1/2 Red Onion, finely diced
1/4 cup Fresh Cilantro
     -2 tsp dried

Dressing Ingredients:
1 cup Salsa 
1 cup Sour Cream
1/4 cup Mayonaise
1 clove Garlic, Minced
1/2 tsp Cumin
Salt & Pepper, to taste
2 Fresh Limes, juiced

Directions: 
Boil the macaroni, drain and rinse with cold water until completely cooled. Toss with the rest of the ingredients, add the dressing and gently stir until ingredients are well coated.

Chill in the refrigerator for 2 hours before serving.

Additional Comments:



Quantity: Makes a large bowl, approx 4 quarts.

Prep Time: 30 minutes
Cooking Time: Chill for 2 hours
