Full Recipe: (1) 9x13, (8) Mini Loaves+ 1 Reg Loaf (will be equal height)

Cream Together in mixing bowl… | ||

Or replace butter with the following: | ||
6T | 3/4c | Coconut Oil, softened |
6T | 3/4c | Vegan Butter, softened |
Beat Together... | ||
2 | 3 | Eggs, beaten |
1 tsp | 2 tsp | Vanilla Extract |
Or replace eggs with the following: | ||
1T + 3T | 2T + 6T | Flaxseed, Ground + water |
2T | 4T | Applesauce |
Blend Together... | ||
6T | 3/4c | Yogurt, Vanilla |
6T | 3/4c | Milk |
Or replace above with one of the following: | ||

Sift Together… | ||

1/4 tsp | 1/2 tsp | Cloves |
1/2 tsp | 1 tsp | Pumpkin Pie Spice |
1/4 tsp | 1/2 tsp | Cinnamon |
Or replace All Spices with the following: | ||

Mash Together… | ||
2 large | 3 large | Bananas, over ripe |
1 tsp | 2 tsp | Lemon Juice |
Fold into batter or sprinkle on top… | ||
1/2c | 1c | Black Walnuts, chopped (opt'l) |
Full Recipe Alteration: 3 bananas, 2 eggs + 1 snack cup applesauce, 3/4c 2% milk + 1 small tub vanilla yogurt. Mini loaves 35 min @ 300°.
CREAM CHEESE FROSTING
8 oz cream cheese, softened
1/2 cup butter, softened
3-3.25 cups confectioners' sugar
1 tsp vanilla extract
Directions:
Preheat oven, grease and flour pans (see "Bakers Grease Recipe"), and prepare the ingredient mixture phases below, divided in separate containers.
In mixing bowl, cream butter & sugars together.
Add egg mixture a little at a time.
Alternate flour mixture and milk mixture, small amounts at a time.
Stir in banana mixture, with a spoon.
Fold in nuts, or add on top of filled pan.
Bake at 300 degrees, until knife inserted into crown comes out clean:
-loaf pan/9x9 square pan 50-60 min
-cupcakes & mini loaves 35-40 min
-9x13 cake pan 1 hour
Cool 5 min. Remove & completely cool on rack. Tightly cover and store in refrigerator for 5 days or freeze for 3 months.

6T = 1/4c + 2T
3 bananas=1.5c mashed
Betty Crocker tub=7T yogurt
Ice Cream Scoop=2/3c; 1 scoop=1 cupcake; 2 scoops=1 mini loaf
Pumpkin Pie Spice: 12t (3T) cinnamon + 2t ginger + 2t nutmeg + 1.5t allspice + 1.5t cloves
Vegan Substitutions:
1 egg=1 banana; 1T applesauce;
1 egg=1T ground flax seed (or chia) + 3T water (refrigerate 15 min)
1 egg=1T ground flax seed (or chia) + 3T water (refrigerate 15 min)
1 c Buttermilk=1T vinegar + 1c any milk
Butter=equal amounts of vegan butter or 76⁰ coconut oil
Additional Comments:
My mama says "Black" Walnuts is the key to the traditional flavor of banana nut bread.
