Easy Cashew Chicken


Complete Springfield Style Dinner Guide

Quick 20 min cheater method...or make it all from scratch

Ingredients:

1 bag Frozen Chicken Nuggets (boneless, battered, pieces)
     -Tyson Anytizers, boneless chicken bites
     -or Battered Chicken Tenders, cut up
     -or make your own
Cashew Halves
Green Onion, chopped (optional)

Sauce:
2 cans turkey gravy
1 can chicken gravy
1 Tbsp Oyster Sauce
1 tsp White Pepper
Beef Bouillon, to thin
     -or chicken bouillon
     -or beef/chicken broth
     -or dry sherry or white wine
     -or water

Rice:
1 Env Liptons/Knorr Chicken Fried Rice
     -or white minute rice (boil in a bag)
     -or traditional sticky rice recipe
1/4 cup Frozen Pea's (optional)
1 Fried Egg, chopped (optional)
1/2 Onion, chopped & sauteed (optional) 
Soy Sauce for service

Hot Tea, choice of flavor:
     -I use decaf for dinner
     -Make a batch in the coffee pot
Egg Drop Soup:
     -Ty Ling Egg Drop Soup Mix
     -1 Egg
     -1 quart Water
     -or make your own
Crunchy Soup Noodle: 
     -Crunchy Chow Mein Noodles
     -or make your own noodles
Crab Rangoon:
    - Pagoda Express 8 pc bag, frozen
     -Pagoda Express 10 pc cream cheese wonton
     -or make your own
Dipping Sauce: 
     -Kraft Sweet & Sour Sauce
     -or Ka-Me Duck Sauce
     -or Plum Sauce
Fortune Cookies:
     -LaChoy (indiv wrapped)
     -or make your own


Preheat Oven to:
If baking: Preheat to 400 degrees.

If frying: Preheat to 200 degrees for warming oven.

Directions:
This is dinner instructions for the original cheater methods. Adjust if you make alterations. See the Special Tips section below  for homemade recipes. This cheater method I've created can be pulled off in 20 minutes for a complete Asian dinner! See cooking times below for a summary. 

Hot Tea: 
Thoroughly wash out all remnants of coffee in your machine. Add 1 reg size tea bag per 1 cup of water into the coffee pot carafe, with tags sticking out of the lid and not touching the burner. Fill machine with water and turn on. Let steep until desired strength is reached and then remove the tea bags. This method free's up your stove top and also keeps a large batch of tea hot and ready to drink.

Egg Drop Soup: 
Empty "Ty Ling Egg Drop Soup Mix" into water and stir.  Heat and stir frequently until soup comes to a boil.  Then simmer for one minute.  Gradually add 1 well beaten egg to boiling soup.  Stir soup rapidly with a fork while adding egg.

Chicken and/or Crab Rangoon:
Baking: In a 400 degree oven bake frozen "Tyson Anytizers, boneless chicken bites" for 15 minutes; frozen "Pagoda Express Crab Rangoon" for 8-10 minutes.

Frying: If you are frying the chicken and/or homemade rangoons, preheat a good depth of oil in a skillet or deep fryer to 350 degrees. Fry until golden brown. Keep batches warm in a 200 degree oven. Use a cooling rack on top of a sheet pan to keep crisp and drain excess oil. 

Sauce:
On the stove top, combine all the sauce ingredients in a sauce pan. Bring to boil, reduce heat and simmer for 10-15 min. Thin to desired consistency.  

Rice:
In the microwave, combine 2 cups water, the frozen peas and the contents of the "Liptons/Knorr Chicken Fried Rice" package. Cook uncovered on high for 10-12 minutes or until rice is tender.

In a skillet, fry the egg and onion. Chop up and fold into the cooked rice. You can make this ahead of time and set aside until ready to use. 

Service:
If you have guests, serve appetizers while you cook. Serve the egg drop soup with crunchy chow mein noodles. Serve the tea with honey or sweeteners. Crab Rangoon Dip Idea:  Warm the crab-meat filling separately and serve it as a dip with baked wonton chips.

Serve buffet style or build individual platters. Pour sauce over the chicken. Top with chopped green onions and cashews. Add rice and crab rangoon to the plate. Serve with soy sauce for the rice and sweet & sour dipping sauce for the rangoons. And don't forget the fortune cookies!

Karen's Homemade Crab Rangoon Recipe:
Wonton Wrappers, refrigerated
     -usually found in the produce dept
Cream Cheese, softened
Imitation Crab Meat, minced
     -usually found in the seafood section
Beaten Egg, to seal edges
     -or just use water to moisten edges
Peanut Oil-Deep Fryer
     -or veg oil
     -or bake

Put a heaping spoonful of filling in middle of wrapper. Wet the edges or brush with egg. Fold in half to form triangle like a wonton, or bring all four corners together at the top, which conserves pan space so you can cook more in a batch. Pinch to seal. Fry in small amount of oil in skillet or deep fry. Can also bake in 425ยบ oven for 12-15 minutes, until golden brown.

Warnings:  
Sauce: No matter how much sauce you cook, make sure there is 2 parts turkey gravy to 1 part chicken gravy.  Too much chicken gravy seems to overpower the sauce.  


Crab-meat: Of course fresh crab is the best, but not always available. I've tried the canned crab-meat, and thought it was disgusting in the rangoons! To each his own if you want to try. I prefer to use the imitation (white fish) crab-meat vs the canned. The alternative is to just make cream cheese wontons. 

Additional Comments:
This is a fast, easy cheater method I concocted to make a decent Springfield MO style Cashew Chicken dinner at home. It's not the real deal, but for the amount of effort involved...its great!

Prep Time: 5 minutes
*Make preparations for all the dishes and have everything laid out, measured and ready. Then basically cook them all at the same time. 

Cooking Time: 15 minutes
*Baked Chicken & Crab Rangoon + Microwave Rice + Stovetop Sauce
*While the above is self cooking, prepare: Stovetop Soup + Coffee Pot Tea + Stovetop Fried Egg & Onion for the rice. 

Total Time: The 20 minute meal!
