Eggs Benedict with Hollandaise

with Fast Microwave & Toaster Oven Options

Ingredients:
For each serving:
1/2 English Muffin
1 Slice Canadian Bacon (or ham)
1 Egg, whole
1 Tbls Water
Olive Oil
Optional Toppings:
Chopped Green Onions or Chives
Chopped Fresh Parsley
Hollandaise Sauce Recipe
Butter
Lemon Juice
Egg Yolk
White Pepper
Paprika
Optional: Garlic Pwdr, Dry Sherry
Make any amount of the sauce.

Directions for Traditional Benedict:
Preheat the oven to 350 degrees and put a pan of water on to boil. Prepare ingredients for the Hollandaise Sauce.
When everything is ready to begin, put the muffin halves w/Canadian bacon on a sheet in the oven and add the eggs to the water to poach. Start making the Hollandaise.
After its all done, start the layer:
English Muffin Half
Canadian Bacon
Poached Egg
Top with Hollandaise Sauce
Sprinkle with Paprika
Apply optional toppings
Serve Immediately
Cooking Method Options:

-in a toaster oven
-in a 350 degree oven for 10 min
-muffin in toaster, warm ham in microwave or pan
Hard Poached Egg: Microwave
Brush custard cup with olive oil
Add water
Add egg, pricking yolk several times
Microwave 1 min until desired doneness
Soft Poached Egg: Traditional
Bring a pan of water to a rolling boil. Reduce to a high simmer. Crack eggs into a measuring cup individually. Gently pour the egg into the water being careful not to break the yolk. Simmer 3-5 min until desired doneness. Remove with a slotted spoon to drain.

Otherwise, I use a custard cup to make the perfect size round egg.
