Granny Mutt's Fried Pies

Ingredients: 
Refrigerated Buttermilk Biscuit Dough
     -Note: 10 biscuits in reg 12 oz size can
Apple Butter
     -jar located in the Jelly section
Veg or Canola Oil
     -for frying
Butter & Powdered Sugar (optional)
     -for topping
Flour
     -for rolling out

* OR use any other type of pie fillings, applesauce or Jam


Directions:
On a floured board, roll out one biscuit. Add a heaping tablespoon of apple butter on one side. Swipe water around the edge of the circle with your finger (or brush) to moisten. Fold the dough circle in half to form a half moon shape.  Dip a fork in flour and press the edges together to seal. Repeat. 


Paula Dean's Georgia Method: Heat a good amount of oil in iron skillet (or 350 degrees deep fryer).  Carefully place in  hot oil and cook for 5+ minutes until golden brown. Flip to ensure even browning. Take out with slotted spoon and drain on cooling rack over a pan. 

Granny Mutt's Arkansas Method:
She just fried hers in butter and drained on a paper towel.  It doesn't look as pretty, but I don't ever remember complaining about them. They was always a favorite treat. 

Topping Options: 
- Chef Emeril serves his Mississippi pies with an Apple-Brown Butter Caramel Sauce and BAM! adds a scoop of vanilla bean ice cream :)
- Brush with butter and dust with powdered sugar.
- Roll the pies in cinnamon/sugar before they dried.
- Drizzle a sugar glaze on top

Baking Option:
It wouldn't be the same, but you you could bake them instead of frying. Bake on an ungreased cookie sheet 15 to 20 minutes @ 375 degrees. Immediately roll in sugar mixed with cinnamon.

Additional Comments:
This is one thing I remember Granny Mutt always making, so you know it's easy!  Not many recipes call for the Apple Butter anymore, but it is the old fashioned, southern way to cook fried pies and just wouldn't be the same with any other kind of filling if you ask me! 


What to use the rest of the Apple Butter for?
Just with a hot biscuit and butter of course!

A favorite when I was a kid, was to spread some on top of  Raisin Bread Toast. 

Martha Stewart came up with French Toast Apple Butter Sandwiches. Which is basically just two pieces of prepared french toast with apple butter in the middle and dusted with powdered sugar. The only thing different is she added 1 tsp pure vanilla extract and 1/2 tsp of pumpkin pie spice to the egg & milk mixture.  Also see recipe in this blog for French Toast.





Or for another treat, spread on crescent dough before rolling them up
