Pumpkin Pie

PUMPKIN PIE

Ingredients:
1 reg can Pumpkin, 15 oz or 2 c Fresh
1 sm can Sweetened Condensed Milk or
     -or evaporated milk with 3/4 c sugar
2 Eggs
1/2 tsp Salt
2 3/4 tsp Pumpkin Pie Spice or
     -1 tsp Cinnamon
     -1/2 tsp Ginger
     -1/2 tsp Nutmeg
1 Unbaked Pie Shell, 9" Deep Dish
     -or two reg shallow pies
Whipped Cream
     -or Sour Cream Topping

SOUR CREAM TOPPING:
1 1/2 c Sour Cream
1 Tbsp Sugar
1 tsp Vanilla

Preheat Oven: to 425 degrees

Directions:
Combine all ingredients for the pie filling and mix thoroughly in a bowl. Pour into deep dish pie crust.

Bake @ 425 degrees for 15 min.

Reduce heat to 350 degrees and bake 35-40 minutes.  It's done when a knife inserted in the middle comes out clean.Top with whipped cream after its completely cooled. 

If using the Sour Cream Topping:
Spread the mixture on the pie during the last 10 min of cooking time. 

Special Tips or Information:
Put a foil ring around the edge of the crust to prevent over browning.  Remove the last 15 minutes of baking.  Can use a store bought ring or make your own out of tin foil.

If baking in a tin pan, place on a cookie sheet to prevent the pie from bending and splitting the top when removing from the oven.
