Cauliflower Au Gratin...
Low Calorie, Low Carb, Low Fat, Low Sugar, Gluten Free, High Protein, High Vit C, Zero Trans Fat, South Beach Diet Approved. Potato Au Gratin alternative.
*CAULIFLOWER:
6 c Cauliflower Flourettes (1.5 sm/1 lg head)
1 1/2 tsp Salt
1/2 c Frozen Green Peas (opt'l)
Boil until tender. Drain thoughly. Set aside.
*CREAM MIXTURE:
4 oz Cream Cheese, fat free, softened (1/2 reg size block)
3/4 c Plain Greek Yogurt, fat free (or light sour cream)
2 Tbsp Parmesan Cheese
1 tsp Cracked Black Pepper
1/2 tsp Garlic Powder (opt'l)
1 tsp Parsley, dried (opt'l)
1/2 tsp Paprika (opt'l)
1/4 c Green Onion, chopped (4 stalks)
8 oz pkg Diced Ham, lean, 96% fat free
*COMBINE:
Cauliflower into cream mixture.
*FILL DISH:
2 tsp XV Olive Oil
Pour contents into greased baking dish (med size deep sided casserole dish)
*TOP WITH:
3/4 c Grated Cheddar Cheese, low fat
*BAKE:
Uncovered in preheated 350 deg oven for 30 minutes. Stand 10 min.
